5-Ingredient Freezer Breakfast Burritos

These make-ahead breakfast burritos combine fluffy scrambled eggs, savory sausage, cheddar cheese, salsa, and soft flour tortillas. They can be frozen for up to 3 months and reheated individually for a quick, satisfying breakfast.

  • ¼ pound sausage
  • ¼ cup salsa

Method
 

  1. Cook the Sausage: Brown ¼ pound sausage in a skillet over medium heat until cooked, then transfer it to a bowl and set aside.
  2. Scramble the Eggs: Cook the 6 eggs in a skillet over medium heat, stirring as needed, until fully cooked. Transfer the scrambled eggs to a separate bowl.
  3. Prepare the Tortillas: Arrange the 6 flour tortillas on a clean, flat surface so they are ready to fill.
  4. Add the Fillings: Divide the scrambled eggs, cooked sausage, ¼ cup salsa, and ½ cup shredded cheddar cheese evenly among the six tortillas.
  5. Wrap the Burritos: Fold and roll each tortilla around its filling to form a secure burrito.
  6. Freeze the Burritos: Arrange the wrapped burritos in a single layer on a baking sheet and place them in the freezer for 1 hour.
  7. Store for Later: Transfer the partially frozen burritos to a freezer-safe bag or container and store them in the freezer for up to 3 months.
  8. Reheat from Frozen: Remove one burrito from the freezer bag, wrap it in a damp paper towel, and microwave for up to 2 minutes, or until heated through.
