Buffalo Ranch Chickpea Wraps

Crispy ranch-seasoned chickpeas are air-fried, coated in a buttery hot sauce mixture, then wrapped with a crunchy ranch-dressed vegetable slaw. Warm tortillas and optional blue cheese complete this flavorful Buffalo-inspired meal.

Ingredients
  

For the Chickpeas
  • 2 15.5-oz. cans chickpeas, drained and rinsed
  • 2 Tbsp. vegetable oil
  • 1 tsp. kosher salt divided
  • 1 1-oz. packet ranch seasoning powder
For the Vegetable Filling
  • 1/4 head napa cabbage shredded, about 3 cups
  • 1 medium carrot peeled and grated
  • 3 celery ribs thinly sliced
  • 2 Tbsp. thinly sliced chives or scallions
  • 1/4 cup ranch dressing plus more for serving
  • 2 Tbsp. apple cider vinegar
For the Buffalo Sauce
  • 6 Tbsp. hot sauce
  • 2 Tbsp. honey
  • 2 Tbsp. unsalted butter melted
For Assembly
  • 4 10-inch high-protein or regular tortilla wraps, warmed
  • 4 Tbsp. crumbled blue cheese optional

Method
 

  1. Season the Chickpeas: In a large bowl, drizzle the drained, rinsed chickpeas with vegetable oil. Add 1/2 tsp. of the kosher salt and toss thoroughly to coat, then sprinkle in the ranch seasoning powder and toss again until the chickpeas are evenly seasoned.
  2. Air-Fry the Chickpeas: Transfer the seasoned chickpeas to the air-fryer basket.
    Cook at 400°F for 15–20 minutes, shaking the basket halfway through, until the chickpeas are crisp and beginning to brown.
  3. Prepare the Vegetable Mixture: While the chickpeas cook, place the shredded napa cabbage, grated carrot, sliced celery, and chives or scallions in another large bowl. Season with the remaining 1/2 tsp.
    kosher salt, then add the ranch dressing and apple cider vinegar. Toss until the vegetables are evenly coated.
  4. Make the Buffalo Sauce: In the reserved bowl used for the chickpeas, whisk together the hot sauce, honey, and melted unsalted butter until combined.
  5. Coat the Chickpeas: Add the hot, crisp chickpeas to the Buffalo sauce and toss until they are thoroughly coated in the spicy, buttery mixture.
  6. Fill the Tortillas: Divide the Buffalo-coated chickpeas and dressed vegetable mixture evenly among the four warmed tortillas.
    Add the crumbled blue cheese if using, and add extra ranch dressing for serving if desired.
  7. Roll the Wraps: Fold the left and right sides of each tortilla inward over the filling. Fold the end closest to you over the filling, then tightly roll each wrap upward from the bottom, keeping the sides tucked in as you roll.
  8. Cut and Serve: Cut each finished wrap in half and serve.

Notes

  • Drain and rinse the chickpeas thoroughly before seasoning so excess liquid does not interfere with crisping in the air fryer.
  • Shake the air-fryer basket halfway through cooking to help the chickpeas cook evenly.
  • The chickpeas are ready when they are crisp and beginning to brown, which may take 15–20 minutes at 400°F.
  • Use either high-protein or regular 10-inch tortillas, depending on preference.
  • Blue cheese is optional, so the wraps can be served without it.
  • Keep the tortilla sides tucked inward while rolling to help prevent the filling from escaping.
  • Extra ranch dressing can be served alongside the finished wraps.
