Classic Homemade Lepinja Balkan Flatbread

Soft, airy, and lightly golden, this homemade Lepinja combines a tender bread interior with a delicate crust and signature diamond pattern. Made from simple pantry ingredients, it is delicious warm, at room temperature, for sandwiches, dipping, or serving alongside savory meals.

Ingredients
  

  • 500 g all-purpose flour 4 cups
  • 15 g sugar 1 tablespoon
  • 360 ml warm water 1½ cups
  • 10 g active dry yeast 1½ teaspoons
  • 10 g salt 1½ teaspoons
  • 30 g olive oil or lard 2 tablespoons

  • Dull-sided knife or the spine of a knife

Method
 

  1. Combine Flour and Sugar: Place the all-purpose flour in a large mixer bowl, then dissolve the sugar in the warm water.
  2. Activate the Yeast: Make a well in the center of the flour, pour in the lukewarm water, and add the active dry yeast. Leave the mixture undisturbed for 5 minutes to allow the yeast to activate.
  3. Begin Kneading: Fit the mixer with a dough hook and knead the mixture until the ingredients come together into a dough.
  4. Add Salt: Add the salt and continue kneading the dough for 5 minutes.
  5. Incorporate the Fat: Add the olive oil or lard and knead for another 3–4 minutes, or until the dough becomes smooth.
  6. First Rise: Cover the bowl with a kitchen towel and let the dough proof for about 1 hour, or until it has doubled in size.
  7. Divide the Dough: Transfer the risen dough to a floured work surface, roll it into a log, and cut it into 6 equal portions.
  8. Shape the Dough Balls: Shape each portion into a smooth ball by cupping your palm over the dough and moving your hand in a circular motion; the friction from the work surface helps create a smooth shape.
  9. Flatten the Dough: Sprinkle the dough balls with flour, then use your hands to press each one into a flat round approximately 6 inches in diameter.
  10. Second Rise: Arrange the flattened dough rounds on a flour-dusted baking tray, cover them, and let them proof for 15 minutes.
  11. Preheat the Oven: While the dough proofs, preheat the oven to 500°F.
  12. Create the Diamond Pattern: Using the spine, or dull side, of a knife, gently press lines across the surface of each dough round to create the characteristic diamond pattern.
  13. Bake the Lepinja: Bake one tray at a time for 8–10 minutes, or until the tops are golden.
  14. Soften the Crust: Transfer the baked lepinja to a wire rack, gently splash the tops with water, and immediately cover them with a kitchen towel to help keep the bread soft.
  15. Serve: Serve the lepinja warm or at room temperature.

Notes

  • Lepinja is best enjoyed on the day it is baked, when the crust and soft interior are at their freshest.
  • Store any leftovers in an airtight container at room temperature for a couple of days.
  • The dough should be allowed to rise until it has doubled in size during the first proof.
  • Flour the work surface and dough portions as needed to make shaping easier.
  • Press the diamond pattern with the dull side of the knife rather than cutting through the dough.
  • Bake the breads one tray at a time so each batch receives the high heat specified in the recipe.
  • Splashing the freshly baked bread lightly with water and covering it with a kitchen towel helps keep the lepinja soft.
