Classic Moroccan Lamb Stew

A hearty Moroccan-style lamb stew featuring deeply browned lamb, tender vegetables, chickpeas, dried apricots, tomatoes, and aromatic spices. Slow oven braising develops a rich, savory broth while leaving the lamb fall-apart tender. Ingredients
  

  • 2 tablespoons Greek extra virgin olive oil plus more if needed
  • 1 large yellow onion chopped
  • 3 carrots cubed
  • 6 Yukon gold potatoes or any small potatoes, peeled and cubed
  • Kosher salt and pepper to taste
  • 2.5 pounds boneless leg of American lamb fat trimmed and cut into cubes, or American lamb shoulder with bones removed and fat trimmed
  • 3 large garlic cloves roughly chopped
  • ½ cup dried apricots
  • 1 cinnamon stick
  • 1 bay leaf
  • 1½ teaspoons ground allspice
  • 1½ teaspoons ras el hanout Moroccan spice blend
  • ½ teaspoon ground ginger
  • 6 canned plum tomatoes cut in halves
  • 2½ cups low-sodium beef broth
  • 1 15-ounce can chickpeas

Method
 

  1. Heat the Olive Oil: Place a large Dutch oven or heavy oven-safe pot over medium heat and add 2 tablespoons of olive oil, heating until the oil is shimmering but not smoking.
  2. Sauté the Vegetables: Add the chopped onion, cubed carrots, and potatoes to the hot oil and sauté for about 4 minutes, then add the roughly chopped garlic and season with salt and pepper.
  3. Set Vegetables Aside: Remove the sautéed vegetables from the pot and set them aside briefly while you brown the lamb.
  4. Brown the Lamb: Add more olive oil to the same pot if needed, then add the cubed lamb and brown it deeply on all sides, seasoning it with salt and pepper as it cooks.
  5. Combine the Stew Base: Increase the heat to medium-high, return the sautéed vegetables to the pot, then add the dried apricots, cinnamon stick, bay leaf, ground allspice, ras el hanout, and ground ginger, stirring everything together so the ingredients are evenly coated.
  6. Add Tomatoes and Broth: Add the halved plum tomatoes and beef broth, then bring the mixture to a boil and let it boil for about 5 minutes.
  7. Begin Oven Braising: Cover the pot and transfer it to an oven preheated to 350°F, then cook for 1½ hours, checking partway through and adding water or additional broth if needed.
  8. Add the Chickpeas: Stir the chickpeas into the stew after the first 1½ hours of oven cooking, cover the pot again, and return it to the oven for another 30 minutes.
  9. Serve the Stew: Remove the covered pot from the oven and serve the lamb stew hot alongside Lebanese rice, couscous, pita bread, or your favorite rustic bread.
  10. Add a Fresh Starter: Serve a simple Mediterranean salad such as fattoush as a fresh starter alongside the hearty stew.

Notes

  • Boneless leg of lamb is used in the original recipe, but boneless American lamb shoulder can also be used after removing the bones and trimming the fat.
  • Yukon gold potatoes or other small potatoes can be used, provided they are peeled and cubed as directed.
  • Check the stew partway through the oven braising time and add water or beef broth if the liquid level needs replenishing.
  • The chickpeas are added during the final 30 minutes of oven cooking rather than at the beginning.
  • The recipe can also be prepared in a slow cooker or pressure cooker using the alternative methods provided in the source.
  • For the slow cooker method, transfer the stew after the initial stovetop preparation and cook on low for about 6 hours before adding the chickpeas for another 1 to 2 hours, or cook on high for 4 to 5 hours total.
  • For the pressure-cooker method, cook the ingredients except chickpeas for 30 minutes at high pressure, allow about 10 minutes of natural pressure release, then use quick release according to the manufacturer's directions before adding chickpeas for another 5 minutes.
