Classic Spanish Tortilla Omelette

A traditional Spanish tortilla made from creamy olive-oil-stewed potatoes, tender onion, eggs, and simple seasonings. The tortilla develops a lightly golden underside before being finished under the grill or broiler until the center is just set. Serve it warm or at room temperature for breakfast, brunch, or tapas.

Ingredients
  

  • 750 g / 1.5 lb potatoes peeled and sliced 0.5 cm / 1/5 inch thick
  • 1 onion sliced
  • 1/2 cup / 125 ml olive oil
  • 8 eggs
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for serving

Method
 

  1. Stew the Potatoes: Heat the olive oil in a nonstick frying pan over medium heat, then add the sliced onion and potatoes.
    Turn the potatoes over, cover the pan, and gently stew for about 20 minutes, turning them 3 or 4 times with an egg flip until they are soft and cooked through.
    If the potatoes begin to sizzle or brown, reduce the heat.
  2. Season the Eggs: While the potatoes cook, crack the eggs into a bowl and whisk them together, then season with salt and pepper.
  3. Drain the Potatoes: Once the potatoes are tender, use a slotted spoon to transfer them to a colander, allowing the excess olive oil to drain away.
  4. Reserve Cooking Oil: Pour most of the remaining oil from the skillet, leaving approximately 1 1/2 to 2 tablespoons in the pan.
  5. Preheat the Cooking Surfaces: Increase the stovetop heat to medium-high and turn the grill or broiler to high.
  6. Add the Eggs: Return the drained potatoes to the skillet, then pour the seasoned eggs evenly over them.
  7. Cook the Tortilla: Cook the tortilla for about 5 minutes, or until the underside is lightly golden.
  8. Set the Center: If the center remains uncooked, place the skillet under the high grill or broiler for a couple of minutes, cooking until the center is just set.
  9. Rest the Tortilla: Remove the tortilla from the heat and let it rest for a few minutes.
  10. Flip onto a Platter: Place a serving platter over the frying pan, then carefully flip the pan so the tortilla turns out onto the platter upside down.
  11. Serve: Serve the Spanish tortilla warm or at room temperature, garnished with fresh parsley.

Notes

  • Use an all-purpose potato rather than a waxy variety if you prefer a creamy texture rather than firm potato slices.
  • Yukon Gold works well for this recipe in the US and UK; King Edward potatoes are another suitable UK option.
  • Keep the potatoes gently stewed in the olive oil rather than allowing them to brown. If they begin sizzling or browning, reduce the heat.
  • Turn the potatoes 3 or 4 times during the approximately 20-minute cooking period so they cook evenly.
  • Drain the cooked potatoes in a colander before adding them to the eggs to remove excess oil.
  • Leave about 1 1/2 to 2 tablespoons of oil in the skillet for cooking the tortilla.
  • The center may still be uncooked after the stovetop cooking stage, so use the high grill or broiler for a couple of minutes until it is just set.
  • The tortilla can be served warm or at room temperature.
