Cozy Pumpkin French Toast

Ingredients
  

  • 4 large eggs
  • 1/2 cup canned pumpkin
  • 3/4 cup milk
  • 3 tablespoons light brown sugar
  • 1/4 cup all-purpose flour
  • A dash of salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground nutmeg
  • 8 thick slices of bread
  • Butter for greasing the griddle or skillet

Method
 

  1. Preheat the Cooking Surface: Preheat a griddle or skillet over medium heat, then grease the surface well with butter.
  2. Prepare the Pumpkin Batter: Add the eggs, canned pumpkin, milk, light brown sugar, flour, salt, vanilla extract, cinnamon, pumpkin pie spice, and ground nutmeg to a shallow dish or blender.
    Whisk the mixture until the batter is smooth and well combined.
  3. Coat the Bread: Dip each thick slice of bread into the pumpkin batter, turning it so both sides are evenly coated.
  4. Cook the French Toast: Place the coated bread onto the hot, greased griddle or skillet.
    Cook for a few minutes, until the underside is browned.
  5. Flip the Slices: Carefully turn each slice over and continue cooking until the second side is browned and the French toast is cooked through.
  6. Serve Warm: Transfer the finished French toast to serving plates and serve warm with syrup and powdered sugar.

Notes

  • For the best texture, use thick slices of bread that can absorb the pumpkin batter while remaining sturdy during cooking.
  • Texas toast, challah, brioche, or French bread can be used according to the original recipe notes.
  • The pumpkin French toast is best served fresh and warm.
  • The batter can be prepared a few hours ahead and stored covered in the refrigerator until ready to use.
  • For freezing, allow the cooked French toast to cool completely, then store it in a freezer-safe bag or container for up to 3 months.
