Creamy Cheddar Corn Casserole

A rich, creamy slow cooker corn casserole made with whole kernel corn, cream-style corn, cornbread mix, sour cream, butter, honey, and cheddar cheese. It is an easy holiday side dish with a tender texture and sweet, buttery corn flavor.

Ingredients
  

  • 1 15-ounce box cornbread mix
  • 2 cans whole kernel corn drained
  • 2 cans sweet corn cream style
  • 1 cup sour cream
  • ½ cup butter melted
  • ¼ cup honey
  • ½ cup shredded cheddar cheese

Method
 

  1. Combine the Corn Mixture: Add the drained whole kernel corn, cream-style corn, sour cream, melted butter, cornbread mix, and honey to a large mixing bowl.
  2. Mix the Ingredients: Stir everything together until the ingredients are evenly combined and the mixture is well blended.
  3. Prepare the Slow Cooker: Grease a 6-quart slow cooker, then transfer the corn mixture into the prepared cooker and spread it evenly.
  4. Cook the Casserole: Cover the slow cooker and cook on Low for 3–4 hours or on High for 2 hours, until the casserole is finished cooking.
  5. Manage Condensation: If desired, place a towel under the slow cooker lid while cooking to help catch condensation and prevent moisture from dropping onto the casserole.
  6. Add the Cheddar: Once the casserole has finished cooking, sprinkle the shredded cheddar cheese evenly over the top.
  7. Melt the Cheese: Cover the slow cooker again and allow it to stand until the cheddar cheese has melted over the warm casserole.

Notes

  • Drain the whole kernel corn thoroughly before adding it to the mixture.
  • Melt the butter before combining it with the other ingredients.
  • A 6-quart slow cooker is specified for this recipe.
  • Cook on Low for 3–4 hours or High for 2 hours.
  • A towel placed under the slow cooker lid can help catch condensation during cooking.
