Creamy Sausage Kale Bean Soup

A hearty slow-cooked soup featuring Italian sausage, white beans, vegetables, kale, Parmesan, and a bright parsley dressing. The optional heavy cream adds extra richness, while the fresh dressing provides a refreshing contrast to the savory broth.

Ingredients
  

For the Soup
  • 2 lbs. ground Italian sausage mild or hot
  • 1 medium yellow onion diced
  • 3 large carrots peeled and diced
  • 3 –4 stalks celery peeled and diced
  • 3 cloves garlic minced
  • 1 tsp. Italian seasoning
  • 1 tsp. smoked paprika
  • Salt and pepper to taste
  • 2 bay leaves
  • 15 oz. can crushed tomatoes or petite diced tomatoes optional
  • 6 cups chicken broth
  • 1 bunch lacinato or curly kale chopped
  • 3 15.5 oz. cans white beans, drained and rinsed
  • 1/2 cup freshly grated Parmesan plus more for garnish
  • 1/2 cup heavy cream optional for creaminess
  • Crusty bread for serving
For the Parsley Dressing
  • 1/3 cup fresh flat-leaf Italian parsley finely chopped
  • 2 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 2 cloves garlic finely grated
  • Pinch of salt

Method
 

  1. Brown the Sausage: Heat a skillet over medium heat and cook the ground Italian sausage until browned and crumbled, about 5–6 minutes.
    Drain excess fat if needed.
  2. Build the Slow Cooker: Add the browned sausage, diced onion, carrots, celery, minced garlic, white beans, chicken broth, tomatoes if using, Italian seasoning, smoked paprika, salt, pepper, and bay leaves to the slow cooker.
    Stir everything together to distribute the ingredients and seasonings evenly.
  3. Slow Cook the Soup: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the vegetables are tender.
  4. Add the Kale: Stir the chopped kale into the soup during the final 20–30 minutes of cooking.
    Continue cooking until the kale is wilted and tender without becoming mushy.
  5. Prepare the Parsley Dressing: Combine the finely chopped parsley, olive oil, lemon juice, grated garlic, and a pinch of salt in a small bowl. Stir well to combine.
  6. Finish the Soup: Remove the bay leaves from the slow cooker.
    Stir in the freshly grated Parmesan and heavy cream, if using.
    Taste the soup and adjust the salt and pepper as needed.
  7. Garnish and Serve: Ladle the hot soup into bowls, sprinkle with additional Parmesan, and spoon the fresh parsley dressing over the top.
    Serve with crusty bread.
  8. Store: Allow the soup to cool completely, then transfer it to an airtight container and refrigerate for 3–4 days.
  9. Freeze: Allow the soup to cool completely before transferring it to freezer-safe containers or bags.
    Freeze for 4–6 months and label the container or bag with the preparation date.

Notes

  • Add the kale during the final 20–30 minutes so it becomes tender while retaining its fresh character.
  • The Italian sausage can be mild or hot, depending on the preferred level of heat.
  • The crushed tomatoes or petite diced tomatoes are optional and can be omitted without changing the basic cooking method.
  • Heavy cream is optional and can be added at the end for a richer, creamier texture.
  • Drain and rinse the canned white beans before adding them to the slow cooker.
  • Remove both bay leaves before serving.
  • The fresh parsley dressing adds a bright contrast to the rich sausage, beans, Parmesan, and broth, so it is worth preparing alongside the soup.
