Crispy BBQ Roasted Chickpeas

Crispy BBQ Roasted Chickpeas are golden, crunchy chickpeas coated in a smoky-sweet BBQ spice paste made with maple syrup, smoked paprika, chili powder, garlic, black pepper, and optional cayenne. They make a flavorful snack or crunchy topping and are especially enjoyable while freshly prepared.

Ingredients
  

For the Chickpeas
  • 1 15-ounce can chickpeas, very well drained and thoroughly dried
  • 1 tablespoon avocado oil or another neutral oil
  • 2 teaspoons maple syrup
For the BBQ Seasoning
  • 1½ teaspoons smoked paprika
  • 1 teaspoon chili powder
  • ¾ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional
For an Oil-Free Version
  • Omit the oil and do not rinse the chickpeas; simply drain them well.

Equipment

  • Clean, absorbent kitchen towel
  • Mixing bowl for the chickpeas

Method
 

  1. Preheat the Oven: Preheat the oven to 350°F (176°C) and prepare a bare baking sheet or line it with parchment paper.
  2. Drain the Chickpeas: Drain the chickpeas very well; if using oil, rinse them thoroughly with water before draining again, while the oil-free version should only be drained without rinsing.
  3. Dry the Chickpeas: Spread the drained chickpeas over a clean, absorbent towel and gently roll them with your hands to remove as much moisture as possible.
  4. Remove the Skins: As you dry the chickpeas, some skins will loosen and come away; remove the skins that come off naturally, or peel all the chickpeas if you want slightly greater crispiness.
  5. Coat with Oil: Transfer the dried chickpeas to a mixing bowl, add the avocado or neutral oil, and toss thoroughly until evenly coated.
  6. Roast the Chickpeas: Spread the oiled chickpeas over the prepared baking sheet and bake for 45 minutes, or until they are golden brown and dry and crispy to the touch.
  7. Turn During Baking: About halfway through baking, turn the pan around and shake the chickpeas to encourage more even cooking.
  8. Check for Crispness: Keep in mind that peeled chickpeas cook faster than unpeeled chickpeas, and chickpeas prepared without oil also cook faster, so check their texture accordingly.
  9. Prepare the BBQ Seasoning: While the chickpeas are roasting, combine the maple syrup, smoked paprika, chili powder, garlic powder, sea salt, black pepper, and optional cayenne pepper in a medium mixing bowl.
  10. Form the Seasoning Paste: Stir the seasoning ingredients together until they form a paste, making sure the spices are evenly incorporated.
  11. Coat the Warm Chickpeas: Remove the roasted chickpeas from the oven while they are still warm, add them to the seasoning mixture, and gently toss until every chickpea is evenly coated.
  12. Set the Seasoning: Return the seasoned chickpeas to the baking sheet and allow them to cool completely so the BBQ coating can dry and set.
  13. Serve or Store: Enjoy the chickpeas as a snack or use them as a crunchy topping for grain bowls, kale salads, or chopped salads; for storage, place them in a container or jar without tightly covering it so they can breathe and remain crisp longer.
  14. Freeze for Longer Storage: For longer storage, seal the chickpeas well and freeze them for up to 1 month.

Notes

  • Drying the chickpeas thoroughly before roasting is important for achieving a crisp texture.
  • Some chickpea skins will naturally loosen while drying; removing all the skins is optional but can produce slightly crispier results.
  • Do not add the BBQ seasoning before roasting, as the seasoning can interfere with the chickpeas becoming crisp.
  • Peeled chickpeas cook faster than unpeeled chickpeas, so watch their texture during roasting.
  • If making the oil-free version, skip rinsing and simply drain the chickpeas well; they will also cook faster.
  • The chickpeas are crispiest on the first day and can be kept at room temperature for 4–5 days when stored without tightly covering the container.
  • For longer storage, seal the chickpeas well and freeze for up to 1 month.
  • The optional cayenne pepper adds extra heat and can be left out for a milder BBQ flavor.
  • The source notes that coconut sugar was tested as a substitute for maple syrup but did not adhere to the chickpeas as well.
