Combine Ingredients: Add the red lentils, water, curry powder, and salt to a bowl or directly to your blender, then mix everything together.
Soak the Lentils: Leave the lentil mixture to soak for 1 hour.
Blend the Batter: Blend the soaked mixture without draining the water until it forms a thick, relatively smooth batter.The consistency should resemble very thick pancake batter, and a slight graininess is normal. If the lentils are not blending well in a less powerful blender, let the mixture rest for another 15 minutes before blending again. Heat the Pan: Place a nonstick frying pan or well-seasoned cast iron skillet over medium-high heat and add a small amount of oil.
Cook the First Side: Spoon 2 to 3 tablespoons of batter into the hot pan for each flatbread. Cook for 1 to 2 minutes, until bubbles begin appearing on the surface.
Flip the Flatbread: Carefully turn the flatbread over with a spatula.
Cook the Second Side: Cook for another 1 to 2 minutes, until the underside is lightly browned and the flatbread is cooked through.
Finish the Batch: Repeat with the remaining batter until all the flatbreads are cooked. Stack the finished flatbreads on a plate and cover them with a tea towel to help keep them warm.
