Heat the Pan: Place a large pan or Dutch oven with a capacity of at least 5 to 6 quarts/litres over medium heat. Add the olive oil and allow it to heat.
Cook the Onion: Add the diced onion and cook for 6 to 7 minutes, until it becomes translucent.
Add the Aromatics: Stir in the finely chopped garlic and fennel seeds. Cook for another 2 minutes, stirring frequently to keep the garlic and seeds moving.
Add the Vegetables and Seasonings: Add the eggplant, zucchini, bell peppers, tomatoes, black pepper, sea salt, rosemary or Herbs de Provence, and bay leaf. Stir everything together well.
Bring to a Simmer: Allow the mixture to come to a steady simmer. Do not add any liquid, as the vegetables will naturally release enough moisture while cooking.
Simmer Until Tender: Cook for 15 to 20 minutes, until the vegetables are tender but still retain a little texture and the tomatoes have mostly broken down into the mixture.
Remove the Bay Leaf: Take out and discard the bay leaf before serving.
