Preheat the Oven: Preheat the oven to 350°F (176°C).
Prepare the Muffin Tin: Grease 4 muffin cups measuring 2½ inches each.
Layer the Phyllo: Brush 1 sheet of phyllo pastry evenly with melted butter. Place a second sheet on top and brush it with butter as well. Cut the Pastry: Cut the buttered phyllo stack into 6 squares, each approximately 4 inches.Repeat the layering and cutting process with the remaining 2 phyllo sheets. Form the Cups: Stack 3 phyllo squares together, rotating each square so the corners do not line up. Gently press each stack into a prepared muffin cup to form the pastry shell. Repeat with the remaining squares. Add the Parmesan: Sprinkle 1 teaspoon of grated Parmesan cheese into each phyllo-lined cup.
Add the Eggs: Carefully break 1 large egg into each prepared cup.
Season the Eggs: Sprinkle the minced green onion over the eggs, then season with salt and pepper.
Bake the Cups: Place the muffin tin in the preheated oven and bake for 15–20 minutes, or until the phyllo pastry is golden and the eggs are set.
