French Lentil Beetroot Salad

Tender French lentils and roasted beets are layered over baby greens, finished with fresh parsley, creamy goat cheese, and a tangy sherry-mustard vinaigrette for an earthy, elegant salad.

Ingredients
  

Salad
  • 1 pound beets about 3 medium, stems trimmed to leave 1 inch
  • 1 tablespoon extra-virgin olive oil
  • 1 cup de Puy lentils rinsed and drained
  • 2 teaspoons fresh rosemary chopped and divided
  • 1 whole bay leaf dried or fresh
  • 2 large garlic cloves peeled and smashed
  • ½ onion studded with 1 whole clove
  • ½ teaspoon kosher salt plus additional salt to taste
  • ¼ cup flat-leaf parsley minced
  • Freshly ground black pepper to taste
  • 6 cups mixed baby greens
  • 6 ounces goat cheese crumbled
Dressing
  • 3 tablespoons sherry vinegar
  • 2 tablespoons whole-grain mustard
  • 1 teaspoon kosher salt
  • Freshly ground black pepper to taste
  • ⅓ cup extra-virgin olive oil
  • 2 shallots minced

Method
 

  1. Roast the Beets: Preheat the oven to 400°F. Trim the beet stems, leaving about 1 inch attached, then place the beets on a large sheet of aluminum foil.
    Drizzle them with 1 tablespoon olive oil and fold the foil tightly around the beets to create a sealed package.
  2. Bake the Beets: Place the foil-wrapped beets in a small roasting pan and roast for 1 hour, or until they are tender.
    Allow them to cool enough to handle comfortably.
  3. Peel and Dice the Beets: Once the roasted beets are cool enough to handle, peel away the skins.
    Dice the beets and set them aside.
  4. Prepare the Lentils: While the beets roast, rinse and drain the de Puy lentils.
    Transfer them to a saucepan and add enough cold water to cover them by about 2 inches.
  5. Flavor the Lentils: Add 1 teaspoon of the chopped rosemary, the bay leaf, smashed garlic, clove-studded onion, and ½ teaspoon kosher salt to the saucepan.
  6. Simmer the Lentils: Bring the lentils to a boil over high heat, then reduce the heat and simmer uncovered for about 25 minutes, or until the lentils are tender.
  7. Drain the Lentils: Strain the cooked lentils and discard the garlic and onion.
  8. Make the Vinaigrette: While the lentils simmer, whisk the sherry vinegar, whole-grain mustard, 1 teaspoon kosher salt, and freshly ground black pepper together in a small bowl.
  9. Emulsify the Dressing: Gradually whisk the ⅓ cup olive oil into the vinegar mixture until the dressing becomes smooth and slightly thick.
  10. Add the Shallots: Stir the minced shallots into the vinaigrette. Use the dressing immediately, or refrigerate it in a tightly sealed container for up to 3 days.
  11. Dress the Warm Lentils: Transfer the warm lentils to a bowl and stir in half of the prepared dressing.
  12. Cool the Lentils: Allow the dressed lentils to cool completely before continuing.
  13. Finish the Lentil Salad: Add the diced roasted beets, minced parsley, and remaining 1 teaspoon chopped rosemary to the cooled lentils.
    Season to taste with additional salt and freshly ground black pepper.
  14. Dress the Greens: Lightly toss the mixed baby greens with some of the remaining vinaigrette.
  15. Assemble the Plates: Divide the dressed greens among 6 plates, then spoon a portion of the lentil and beet salad over each serving.
  16. Add the Goat Cheese: Crumble the goat cheese over the individual salads.
  17. Finish with Vinaigrette: Drizzle some of the remaining vinaigrette over each serving and serve.

Notes

  • Trim the beet stems to about 1 inch before roasting, as directed in the original method.
  • Keep the foil package tightly sealed so the beets roast in their own moisture.
  • The lentils should be tender but remain intact rather than becoming mushy.
  • Dress the warm lentils while they are still warm so they can absorb the vinaigrette more readily.
  • Allow the lentils to cool completely before adding the roasted beets, parsley, and remaining rosemary.
  • The vinaigrette can be prepared up to 3 days ahead and kept refrigerated in a tightly sealed container.
  • Season the finished lentil mixture with additional salt and freshly ground black pepper according to taste.
  • Add the goat cheese just before serving so its creamy texture remains distinct against the lentils and greens.
