Fresh Arugula Parmesan Salad

A fresh, elegant salad combining peppery arugula, earthy button mushrooms, shaved Parmesan, and toasted pine nuts. It comes together in 10 minutes without cooking and is best enjoyed fresh.

Ingredients
  

  • 4 cups arugula washed and thoroughly dried
  • 1/4 cup button mushrooms cleaned and thinly sliced
  • 1/4 cup Parmesan cheese shaved
  • 2 tablespoons pine nuts toasted
  • Salt to taste
  • Freshly ground black pepper to taste
  • Dressing as needed for tossing

Equipment

  • Large salad bowl
  • Salad tongs
  • Small skillet or pan for toasting the pine nuts
  • Carrot peeler, if shaving Parmesan from a block
  • Cutting board
  • sharp knife

Method
 

  1. Dress the Bowl: Add 2 to 3 tablespoons of dressing to a large salad bowl, creating a light coating at the bottom before adding the greens.
  2. Toss the Arugula: Add the washed, dried arugula and gently toss it with salad tongs, scooping upward from the bottom so the leaves are lightly coated without becoming heavily dressed.
  3. Add the Mushrooms: Add the cleaned, thinly sliced button mushrooms and gently toss again to distribute them throughout the dressed arugula.
  4. Finish the Salad: Scatter the shaved Parmesan and toasted pine nuts evenly over the top of the salad.
  5. Adjust the Dressing: If the salad needs additional dressing, gently move the salad toward one side of the bowl.
    Add another 1 to 2 tablespoons of dressing to the exposed bottom of the bowl, then repeat the gentle tossing technique from the first step.
  6. Season to Taste: Add a little more salt and freshly ground black pepper according to your preference, taking the Parmesan's saltiness into account.
  7. Serve Fresh: Serve the salad immediately for the best texture, allowing the crisp arugula, tender mushrooms, Parmesan, and toasted pine nuts to come together while fresh.

Notes

  • Arugula: Wash the arugula thoroughly and dry it well before assembling the salad. Excess water can dilute the dressing and prevent it from coating the leaves properly.
  • Mushrooms: Clean the button mushrooms before slicing them thinly so their earthy flavor blends easily with the delicate arugula.
  • Shaved Parmesan: A block of Parmesan can be shaved into thin pieces using a carrot peeler. Freshly grated Parmesan can also be used if shaved cheese is unavailable.
  • Pine Nuts: Use toasted pine nuts as specified in the recipe to provide the intended nutty flavor and crisp texture.
  • Dressing: Begin with 2 to 3 tablespoons of dressing and add more only if needed. The goal is a light coating rather than heavily dressed greens.
  • Serving: This salad is best enjoyed fresh so the arugula stays crisp and the contrasting textures remain at their best.
