Healthy Chinese Chicken Egg Fried Rice

A fast, family-friendly Chinese-inspired fried rice featuring tender chicken, scrambled eggs, vegetables, fragrant aromatics, and a rich soy-sesame seasoning. It is an easy and flavorful way to use leftover rice for a satisfying homemade dinner.

Ingredients
  

  • 2 cups 400 g cooked long-grain rice
  • 2 eggs
  • 1 cup 140 g chopped frozen vegetables, thawed
  • 1 chicken breast cut into small pieces
  • 3 spring onions chopped
  • 2 garlic cloves chopped
  • 2 cm fresh root ginger chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
  • ½ tablespoon rice vinegar
  • 1 teaspoon sugar

Equipment

  • Wok or large frying pan
  • Small bowl for mixing the sauce
  • Mixing bowl for beating the eggs
  • Knife and cutting board
  • Wooden spoon or spatula

Method
 

  1. Cook the Chicken: Heat a wok or pan over high heat. Cut the chicken breast into small pieces and season with the salt and black pepper. Add 1 tablespoon of vegetable oil, then stir-fry the chicken over high heat until it is cooked through and lightly browned.
  2. Set Aside the Chicken: Remove the cooked chicken from the wok or pan and set it aside while preparing the remaining ingredients.
  3. Scramble the Eggs: Beat the eggs, then pour them into the same pan. Scramble for 1–2 minutes at most, until the eggs are cooked. Remove them from the pan and set aside.
  4. Sauté the Aromatics: Add the remaining vegetable oil to the pan. Stir in the chopped spring onions, ginger, and garlic, and stir-fry for about 30 seconds.
  5. Combine the Fried Rice: Add the cooked rice, thawed vegetables, cooked chicken, and scrambled eggs to the pan. Stir and toss everything together until well combined.
  6. Prepare the Seasoning: In a small bowl, combine the light soy sauce, dark soy sauce, sesame oil, rice vinegar, and sugar. Mix thoroughly until the ingredients are blended.
  7. Season the Rice: Pour the prepared sauce mixture into the pan with the rice, chicken, vegetables, and egg. Stir well so the seasoning is distributed evenly throughout the fried rice.
  8. Finish and Serve: Garnish the fried rice with chopped fresh parsley and serve hot.

Notes

  • Thawed frozen mixed vegetables work particularly well in this recipe and provide a convenient combination of vegetables.
  • Peas and carrots add a naturally sweeter note to the fried rice, but other vegetables can also be used.
  • The recipe is mild and contains no spicy ingredients, making it suitable for a family meal.
  • If chicken is unavailable, other leftover meat, fish, or seafood can be used instead.
  • A combination of chicken and seafood can also work particularly well.
  • Fresh vegetables may be used in place of the frozen vegetables if preferred.
