Hearty Turkey Barley Soup

A cozy, filling soup made from leftover turkey, pearl barley, vegetables, tomatoes, turkey broth, and fragrant dried herbs. It simmers until the barley is tender, then the turkey is added near the end so it warms through without needing prolonged cooking.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion diced, about 2 cups
  • 2 stalks celery diced, about 1 cup
  • 3 carrots peeled and diced, about 1½–2 cups
  • 2 cloves garlic minced
  • 3 quarts turkey broth or chicken broth
  • 1 can 15 ounces diced tomatoes, drained
  • 1 cup pearl barley not instant
  • 2 bay leaves
  • ½ teaspoon rubbed sage
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 –2 teaspoons salt
  • ½ teaspoon pepper
  • 3 –4 cups leftover turkey
  • ½ teaspoon fresh parsley optional, for garnish

Method
 

  1. Sauté the Vegetables: Heat the olive oil in a large soup pot over medium heat. Once hot, add the diced onion, celery, and carrots. Sauté for 5–6 minutes, stirring as needed, until the onion has softened.
  2. Warm the Garlic: Add the minced garlic to the softened vegetables and stir for about 30 seconds, just until the garlic is warmed.
  3. Build the Soup: Pour in the turkey broth, then add the drained diced tomatoes, pearl barley, bay leaves, rubbed sage, dried thyme, dried rosemary, salt, and pepper. Stir to combine the ingredients.
  4. Simmer the Barley: Bring the soup to a simmer, then continue simmering for 45–60 minutes, until the pearl barley is fully cooked.
    The barley should be soft but still chewy, with no white center visible when a kernel is examined.
  5. Add the Turkey: Stir in the leftover turkey and continue simmering for another 5–10 minutes, until the turkey is heated through.
  6. Adjust the Seasoning: Taste the soup just before serving and add more salt if needed, depending on the saltiness of the broth and your preference.
  7. Garnish and Serve: Remove the bay leaves and garnish the soup with the optional fresh parsley before serving.

Notes

  • Start with 1 teaspoon of salt, especially when using unsalted turkey broth, then taste the soup just before serving and add more if needed.
  • The amount of turkey can be adjusted between 3 and 4 cups depending on what you have available.
  • Leftover chicken can be substituted for the turkey.
  • Use pearl barley rather than instant barley for the cooking time and texture specified in this recipe.
  • Check the barley toward the end of cooking. It should be soft but pleasantly chewy, with no visible white center inside the grain.
  • Fresh parsley is optional and can be used as a simple garnish before serving.
