Hearty Vegan Black Bean Pozole

This easy Black Bean Pozole combines tender black beans, chewy hominy, onion, and vegetable broth for a hearty Mexican vegan soup. Fresh toppings such as avocado, radishes, oregano, onion, and shredded lettuce add contrasting textures and bright finishing flavors.

Ingredients
  

For the Pozole
  • 3 cups cooked black beans or 2 cans (14 oz each), drained and rinsed
  • 3 cups cooked hominy or 1 can (25 oz), drained and rinsed
  • 1 tablespoon vegetable oil such as avocado, canola, or safflower oil
  • ½ onion finely chopped
  • 4 cups vegetable broth or water
  • Salt to taste
For Serving
  • Dried Mexican oregano
  • Thinly sliced radishes
  • Diced avocado
  • Diced onion
  • Shredded lettuce or cabbage
  • Warm corn tortillas or tortilla chips optional

Method
 

  1. Cook the Black Beans, If Needed: Cover dried black beans with water and soak them overnight, then drain and cook them in 6 cups of fresh water for about 1 hour, or until tender; season with salt to taste after cooking.
  2. Sauté the Onion: Heat the vegetable oil in a Dutch oven or large soup pot over medium heat, add the finely chopped onion, and cook for 3–5 minutes, stirring occasionally, until the onion becomes translucent.
  3. Add the Black Beans: Stir the cooked or canned black beans into the sautéed onion, then lightly mash some of the beans against the bottom or side of the pot with the back of a spoon to help give the broth a thicker consistency.
  4. Add the Hominy: Pour in the vegetable broth or water, then add the cooked or canned hominy; stir everything together thoroughly.
  5. Simmer the Pozole: Bring the mixture to a gentle simmer and cook for about 10 minutes, allowing the beans, hominy, onion, and broth to come together.
  6. Adjust the Seasoning: Taste the pozole after simmering and add salt as needed.
  7. Add the Toppings: Ladle the hot pozole into serving bowls, then garnish each bowl with diced avocado, dried Mexican oregano, sliced radishes, diced onion, and shredded lettuce or cabbage.
  8. Serve: Serve the pozole warm, with corn tortillas or tortilla chips alongside if desired.

Notes

  • If using canned black beans, drain and rinse them thoroughly before adding them to the pot.
  • Canned hominy should also be drained and rinsed before use.
  • Vegetable broth provides more depth of flavor than water.
  • For extra heat, the source suggests adding diced jalapeño or a pinch of red pepper flakes.
  • The finished pozole can be refrigerated for up to 5 days.
  • This pozole also freezes well for longer storage.
