Homemade Keto Nutella Style Spread

A creamy homemade chocolate-hazelnut spread made from roasted hazelnuts, cocoa powder, powdered Swerve, hazelnut oil, vanilla, and a pinch of salt.

Ingredients
  

  • 3/4 cup 90 g roasted hazelnuts
  • 3 tablespoons hazelnut oil or avocado oil as a substitute
  • 2 tablespoons cocoa powder
  • 2 to 3 tablespoons powdered Swerve Sweetener starting with 2 tablespoons
  • 3 tablespoons collagen protein powder optional
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

  • Food processor or high-powered blender
  • Baking sheet
  • Glass storage jar
  • Measuring cups and spoons

Method
 

  1. Toast the Hazelnuts: Spread the hazelnuts evenly on a baking sheet and bake at 350°F for 10 minutes.
  2. Remove the Husks: Allow the toasted hazelnuts to cool enough to handle, then rub them between your fingers to remove most of the husks. It is normal for some of the husk to remain.
  3. Grind the Hazelnuts: Transfer the roasted hazelnuts to a food processor or high-powered blender and process until they are finely ground and beginning to clump together.
  4. Blend into Nut Butter: Add 2 tablespoons of the hazelnut oil and continue processing until the ground hazelnuts become smooth and buttery.
  5. Add the Remaining Ingredients: Add the cocoa powder, powdered Swerve Sweetener, optional collagen protein powder, vanilla extract, salt, and the remaining hazelnut oil.
  6. Process Until Smooth: Continue processing until the mixture becomes smooth and creamy.
    Add additional oil as needed to reach the desired smooth consistency.
  7. Adjust the Sweetness: Taste the spread and adjust the sweetness according to preference.
  8. Store the Spread: Transfer the finished spread to a glass jar and store it in the refrigerator for up to two months.

Notes

  • Start with 2 tablespoons of powdered Swerve Sweetener, then adjust the sweetness after blending.
  • The collagen protein powder is optional and can be omitted if preferred.
  • Some hazelnut husk may remain after rubbing the toasted nuts, which is normal.
  • Add extra hazelnut oil gradually if the spread needs a smoother, creamier consistency.
  • Store the finished spread in a glass jar in the refrigerator for up to two months.
