Homemade Teriyaki Chicken Fried Rice

Tender chicken, fluffy rice, scrambled eggs, and colorful vegetables are stir-fried over high heat with a homemade garlic-ginger teriyaki sauce. This easy one-pan meal delivers sweet, savory, hibachi-style flavor in every bite.

Ingredients
  

For the Fried Rice
  • 4 cups cooked rice prepared from 2 cups uncooked rice
  • 1/2 cup oil plus an additional 1/4 cup for frying the eggs and rice
  • 2 lbs chicken breasts 2 large chicken breasts, cut into strips
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 onion chopped
  • 1 carrot diced
  • 1 zucchini cut into matchsticks
  • 2 eggs
For the Teriyaki Sauce
  • 3 garlic cloves crushed
  • 1/4 tsp dried ginger
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 Tbsp apple cider vinegar
  • 3 Tbsp sugar

Method
 

  1. Prepare the Teriyaki Sauce: Whisk the crushed garlic, dried ginger, soy sauce, water, apple cider vinegar, and sugar together in a measuring cup until combined. Set the sauce aside.
  2. Prepare the Chicken and Vegetables: Chop the onion, dice the carrot, cut the zucchini into matchsticks, and slice the chicken breasts into strips. Season the chicken with 1/2 teaspoon salt and 1 teaspoon pepper.
  3. Heat the Wok: Place a large wok or skillet over high heat until hot, then add the oil and allow it to heat.
  4. Stir-Fry the Vegetables: Add the prepared onion, carrot, and zucchini to the hot oil and stir-fry over high heat for 3 minutes. Remove the vegetables from the wok and set them aside.
  5. Cook the Chicken: Add the seasoned chicken strips to the same wok and cook over high heat for 5 minutes, stirring occasionally. Remove the cooked chicken and set it aside.
  6. Scramble the Eggs: Add 1/4 cup oil to the wok, then crack in the 2 eggs. Scramble the eggs while chopping them into smaller pieces with the spatula.
  7. Fry the Rice: Stir the cooked rice into the scrambled eggs and fry over high heat for 3 minutes, stirring as needed to combine everything.
  8. Add the Teriyaki Sauce: Pour the prepared teriyaki sauce into the fried rice and stir thoroughly so the sauce coats the rice.
  9. Combine Everything: Return the sautéed vegetables and cooked chicken to the wok, then stir-fry until the chicken, vegetables, rice, eggs, and sauce are evenly incorporated.
  10. Serve: Serve the teriyaki chicken fried rice while hot, optionally accompanied by yum yum sauce or homemade ranch dressing.

  • Prepare 2 cups of uncooked rice to yield the 4 cups of cooked rice needed for the recipe.
