Lemon Garlic Shrimp Risotto

Creamy Arborio rice is slowly cooked in warm broth and white wine, then finished with lemon, Parmesan, and butter. Garlic-butter shrimp are cooked separately and served over the risotto with fresh parsley and optional lemon.

Ingredients
  

For the Risotto
  • 4 cups chicken or vegetable broth or stock
  • 4 tablespoons butter divided
  • 1/2 medium onion or 1 large shallot finely chopped
  • 1 cup uncooked Arborio rice
  • 1/2 cup dry white wine
  • 1 tablespoon lemon juice
  • Zest from 1 lemon plus more lemon for serving
  • 1/2 cup freshly grated Parmesan cheese
For the Shrimp
  • 1 pound uncooked shrimp 31–40 per pound size, thawed, peeled, tails removed
  • 4 –5 cloves garlic minced
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped

Equipment

  • Large saucepan or pot for warming the broth
  • Dutch oven or large, deep skillet for the risotto
  • Large skillet for cooking the shrimp
  • Ladle
  • Wooden spoon or heat-resistant spatula

  • Fine grater or zester

Method
 

  1. Prepare the Shrimp: Thaw the shrimp under cool running water if needed, then peel and remove the tails so they are ready to cook later.
  2. Warm the Broth: Pour the chicken or vegetable broth into a fairly large saucepan or pot over high heat.
    Reduce the heat to low just before the broth reaches a boil, then keep it warm over low heat throughout the risotto-making process.
  3. Melt the Butter: Place a Dutch oven or large, deep skillet over medium heat and melt half of the butter.
  4. Sauté the Onion: Add the finely chopped onion or shallot and sauté for about 5–7 minutes, stirring occasionally, until softened.
  5. Toast the Rice: Add the Arborio rice and stir constantly for 2–3 minutes, allowing the grains to cook briefly in the butter and onion mixture.
  6. Add the Wine: Pour in the dry white wine and stir until the rice has fully absorbed the wine.
  7. Gradually Add the Broth: Use a ladle to add the warm broth one ladle at a time, stirring nearly constantly.
    Add the next ladle only after the previous amount has been absorbed by the rice.
  8. Cook the Risotto: Continue gradually adding the broth and stirring for about 25–30 minutes, until the liquid has been used and the rice is al dente.
    Taste the rice to check that it has a slight bite rather than being too soft.
    If the risotto begins bubbling too vigorously or cooking too quickly, reduce the heat to medium-low.
  9. Adjust the Texture: If the rice remains undercooked after the available broth has been used, heat additional broth and add it gradually while continuing to stir until the desired texture is reached.
  10. Finish the Risotto: Turn off the burner and stir in the lemon juice, lemon zest, and freshly grated Parmesan cheese until incorporated.
  11. Rest the Risotto: Cover the pot and let the finished risotto sit on the stove while you prepare the shrimp.
  12. Cook the Shrimp: Melt the remaining butter in a skillet, then add the prepared shrimp, minced garlic, crushed red pepper flakes, and some salt and pepper.
    Cook for about 2 minutes per side, or until the shrimp are pink and cooked through.
  13. Serve the Risotto: Spoon the creamy risotto into bowls and top each serving with the cooked shrimp and chopped fresh parsley.
    Add a squeeze of lemon juice if desired, then season with additional salt and pepper as needed.

Notes

  • Risotto is a gradual cooking process, so avoid rushing the broth additions.
  • Keep the broth warm over low heat while preparing the risotto so each addition stays hot.
  • Stir the rice nearly constantly as the broth is added to encourage its creamy consistency.
  • The finished Arborio rice should be al dente, meaning it should remain slightly firm when tasted.
  • If the risotto cooks too quickly or bubbles vigorously, reduce the heat to medium-low.
  • The shrimp are cooked separately so they can develop their buttery garlic flavor without overcooking the rice.
  • Serve the risotto soon after finishing for the best creamy texture.
  • Add the final squeeze of lemon according to taste for extra brightness.
