Make the Batter: Add the wet ingredient mixture to the dry ingredients and gently combine until a batter forms.
Fill the Muffin Cups: Divide the batter evenly among the 9 prepared muffin cavities. Sprinkle the tops with a little extra dried parsley or dried basil, if desired.
Bake the Muffins: Bake for 18 to 22 minutes, or until the centers test done.
