Moroccan Pumpkin & Chickpea Stew

A cozy, flavorful Moroccan-style vegetable and chickpea stew featuring tender winter squash, hearty legumes, warming spices, and sweet raisins. It makes a nourishing-feeling vegan dinner and pairs especially well with your favorite grain.

Ingredients
  

  • 1 tablespoon coconut oil or olive oil or ¼ cup water for water sautéing
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 1- inch knob ginger grated or minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon cinnamon or 1 cinnamon stick
  • 1 good pinch red pepper flakes
  • 2 carrots diced
  • 2 small sweet potatoes cubed
  • 1 small sugar pumpkin about 3–4 cups, cubed, or butternut squash
  • 1 can 28 ounces stewed tomatoes
  • 3 cups cooked chickpeas or 2 cans 15 ounces each, drained and rinsed
  • 3 cups vegetable broth or water
  • ¼ cup raisins preferably golden raisins
  • Mineral salt to taste
  • Freshly cracked black pepper to taste
  • A few large handfuls baby kale or spinach chopped if desired
  • Lemon or lime wedges for serving
  • Fresh cilantro for garnish

Method
 

  1. Prepare the Pumpkin: Slice the pumpkin in half and scoop out the seeds with a spoon. Cut each half into quarters, then remove the tough skin with a vegetable peeler. Alternatively, place the slices on their sides and carefully shave the skin away from top to bottom. Cut the peeled pumpkin into 1-inch cubes.
  2. Sauté the Aromatics: Heat the coconut or olive oil in a large Dutch oven or pot over medium-high heat. Add the diced onion and cook for about 5 minutes, stirring occasionally, until translucent. Add the garlic, ginger, cumin, coriander, cinnamon, and red pepper flakes, then cook for about 1 minute, until the spices and aromatics become fragrant. If using the water-sauté method, use ¼ cup water instead of oil.
  3. Build the Stew: Add the carrots, sweet potatoes, pumpkin, stewed tomatoes, chickpeas, vegetable broth or water, a good pinch of salt, and the raisins. Stir everything together thoroughly.
  4. Simmer Until Tender: Bring the mixture to a boil, then cover the pot and reduce the heat to low. Simmer for 30–40 minutes, or until the pumpkin is fork-tender and the vegetables are cooked through.
  5. Wilt the Greens: Stir in the baby kale or spinach and cook just until the greens have wilted. Taste the stew and adjust with additional salt, freshly cracked pepper, or extra spices or raisins as desired.
  6. Serve: Spoon the hot stew into individual bowls over your choice of rice, quinoa, or couscous. Finish with fresh cilantro and a squeeze of lemon or lime juice before serving.

Notes

  • Squash options: Sugar pumpkin works well, but butternut, delicata, or kabocha squash can also be used.
  • Raisin alternatives: Chopped dates or dried apricots can replace the raisins for a different sweet accent.
  • Greens: Baby kale or spinach can be added for extra color and flavor, but the stew can also be served without greens.
  • Chickpeas: Use either 3 cups of cooked chickpeas or 2 drained and rinsed 15-ounce cans.
  • Storage: Refrigerate leftovers for up to 6 days. For longer storage, freeze for 2–3 months and thaw in the refrigerator.
  • Serving grains: Rice, quinoa, and couscous all pair naturally with the stew.
  • Alternative cooking methods: The original recipe also provides slow-cooker and Instant Pot methods if you prefer not to cook it on the stovetop.
