Red Lentil Blender Waffles

These blender-made red lentil waffles combine soaked lentils, dates, plant-based milk, vanilla, and simple leavening ingredients for golden, crisp waffles with a tender interior. Serve them sweetly or adapt the batter for a savory version.

Ingredients
  

For the Waffles
  • 1 cup 200 grams dry red lentils
  • 2 soft Medjool dates 30 grams, pitted
  • 1/2 –2/3 cup 120–150 ml plant-based milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 –2 pinches salt
  • 1 tablespoon lemon juice or apple cider vinegar
Optional Serving Ingredients
  • Vegan chocolate spread
  • Chopped walnuts

Equipment

  • Fine-mesh sieve
  • Large bowl for soaking the lentils
  • High-speed blender

Method
 

  1. Rinse the Lentils: Rinse the dry red lentils thoroughly in a fine-mesh sieve under water until the water runs almost clear.
  2. Soak the Lentils: Place the rinsed lentils in plenty of water and soak them for at least 2–3 hours.
  3. Drain the Lentils: Drain the soaked lentils thoroughly, rinse them once more, then drain again.
  4. Blend the Batter: Add the drained lentils, Medjool dates, plant-based milk, vanilla extract, baking powder, baking soda, salt, and lemon juice or apple cider vinegar to a high-speed blender.
    Blend until completely smooth and similar in consistency to thick pancake batter.
  5. Scrape the Blender: Pause during blending as needed to shake the blender container or scrape down the sides with a spatula, ensuring the ingredients blend evenly.
  6. Rest the Batter: Let the blended batter rest and thicken while you preheat a lightly greased waffle maker.
  7. Preheat the Waffle Maker: Heat the waffle maker according to its normal operating instructions and lightly grease it with oil or cooking spray.
  8. Fill the Waffle Maker: Pour enough batter into the hot waffle maker to cover about three-quarters of the surface, keeping in mind that the batter will spread as the waffle cooks.
  9. Cook the Waffle: Close the waffle maker and cook until the waffle is golden brown and crisp.
    Cooking time varies depending on the waffle maker, so use the appearance and steam as guides.
  10. Check for Doneness: Continue cooking until little to no steam is visible.
    If the waffle sticks when you try to open the waffle maker, close the lid and cook for another 40–60 seconds.
  11. Cool the Waffle: Carefully transfer the finished waffle to a wire cooling rack so air can circulate around it and help maintain its crisp texture.
  12. Repeat the Cooking Process: Continue cooking the remaining batter in the same manner, lightly greasing the waffle maker as needed.
  13. Serve the Waffles: Serve the waffles with your preferred toppings.
