Ingredients
  

For the Salad
  • 4 cups cherry tomatoes divided equally for roasting and serving raw
  • 1 cup dry pearl couscous
  • 1½ cups roasted chickpeas tossed with ¼ teaspoon smoked paprika before roasting
  • 2 Persian cucumbers thinly sliced
  • ⅓ cup crumbled feta cheese
  • ¼ cup fresh basil leaves plus more for garnish
  • Leaves from 6 fresh thyme sprigs plus more for garnish
For the Dressing
  • 1 tablespoon extra-virgin olive oil plus more for drizzling
  • 1 tablespoon fresh lemon juice plus more to taste
  • 1 garlic clove minced
  • ¼ teaspoon sea salt plus more to taste
  • Freshly ground black pepper

Method
 

  1. Roast the Tomatoes: Prepare 2 cups of the cherry tomatoes according to the roasted tomatoes recipe, then allow them to cool; the roasted tomatoes can be prepared ahead and stored in the refrigerator for a few days.
  2. Cook the Couscous: Bring a pot of salted water to a boil, add the pearl couscous, and cook according to the package directions until al dente, about 9 minutes.
  3. Cool the Couscous: Drain the cooked couscous thoroughly and set it aside to cool before assembling the salad.
  4. Make the Dressing: In a large mixing bowl, whisk together the extra-virgin olive oil, lemon juice, minced garlic, thyme leaves, sea salt, and several grinds of freshly ground black pepper.
  5. Combine the Couscous: Add the cooled pearl couscous to the dressing and toss well so the grains are evenly coated.
  6. Prepare the Raw Tomatoes: Slice the remaining 2 cups of cherry tomatoes in half and add them to the bowl with the roasted tomatoes.
  7. Add the Salad Ingredients: Add the roasted chickpeas, fresh basil, sliced Persian cucumbers, and crumbled feta to the couscous mixture.
  8. Toss the Salad: Gently toss everything together until the ingredients are evenly distributed, then taste and adjust the seasoning with additional salt or lemon juice as needed.
  9. Garnish and Serve: Finish the salad with additional fresh thyme, basil, and a generous drizzle of olive oil, then serve.

Notes

  • The roasted tomatoes can be prepared in advance and stored in the refrigerator for a few days, making final salad assembly easier.
