Ingredient Options Mentioned in the Source
  • Chicken can replace the prawns or be added alongside them.
  • Scallops can replace the prawns or be combined with them.
  • Crab meat can replace the prawns or be added to them.
  • Other prawns including lobster, can be used; larger pieces may need to be cut smaller.
  • Chikuwa can be used instead of kamaboko.
  • Ginkgo nuts can be added for a traditional variation.
  • Other mushroom varieties can replace shiitake mushrooms.
  • Spinach can be used instead of mitsuba.

Equipment

  • Mixing bowl
  • Whisk
  • Fine-mesh strainer
  • Knife
  • Cutting board
  • Measuring spoons and measuring cup
  • Chawanmushi cups or small heatproof bowls with lids or foil
  • Steamer

Method

  1. Prepare the Ingredients: Prepare the kamaboko, fresh shiitake mushrooms, and shrimp according to the recipe’s specified portions, keeping one whole shrimp for each serving and cutting the remaining shrimp into halves or thirds.
  2. Prepare the Egg Mixture: Combine the large eggs with the dashi broth, sake, and mirin, mixing until the ingredients are evenly incorporated.
  3. Strain the Custard: Pass the egg mixture through a fine-mesh strainer to create a smoother custard before steaming.
  4. Arrange the Fillings: Divide the kamaboko, shiitake mushrooms, and prepared shrimp among the chawanmushi cups or small heatproof bowls, arranging the whole shrimp so they can be seen attractively in the finished dish.
  5. Fill the Cups: Carefully pour the strained egg mixture over the ingredients in each cup, leaving the fillings distributed throughout the custard.
  6. Steam the Chawanmushi: Place the cups in a steamer and steam gently until the egg custard is set and has developed its characteristic silky, delicate texture. The source gives a 25-minute total time, including 10 minutes of preparation.
  7. Garnish: Finish the steamed chawanmushi with mitsuba (Japanese parsley) if desired, then serve while warm.

Notes

  • Use large eggs, approximately 55–60 ml (2 fl oz) each, as specified in the source.
  • Dashi is the key flavoring component, so use kombu-bonito awase dashi, a vegan dashi, or instant dashi granules or packets as mentioned in the source.
  • Kamaboko provides a mild seafood flavor and slightly rubbery texture; imitation crab sticks can be used when kamaboko is unavailable.
  • Fresh shiitake mushrooms are preferred, while dried shiitake can be rehydrated in water as an alternative.
  • Keep one whole shrimp per serving for presentation and cut the remaining shrimp into halves or thirds.
  • Unsalted drinking sake and Hon Mirin are the source's preferred choices for the most authentic flavor.
  • Mitsuba is optional but provides a traditional finishing touch.
