- Sauté the Onion: Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the diced onion and sauté for 2–3 minutes, stirring, until fragrant.
- Cook the Aromatics: Reduce the heat to medium. Add the carrots, celery, garlic, salt, pepper, optional chili flakes, and fresh herbs or dried Italian herbs. Sauté for 7–8 minutes, stirring regularly.
- Brown the Tomato Paste: Add the tomato paste to the pot and cook it briefly, allowing it to brown slightly and deepen in flavor.
- Deglaze the Pot: Pour in the red wine, if using, or use broth instead. Scrape up any browned bits from the bottom of the pot. Cook until most of the wine has evaporated.
- Cook the Tomatoes: Add the diced tomatoes along with their juices. Cook for a few minutes, allowing the tomatoes to reduce slightly.
- Add the Lentils and Stock: Stir in the lentils, vegetable stock or broth, and the ground toasted walnuts, hemp hearts, or ground pecans. Bring the mixture to a boil.
- Simmer the Bolognese: Cover the pot tightly, reduce the heat to low, and simmer gently for 20–25 minutes, or until the lentils are tender.Keep in mind that larger lentils may require a longer cooking time.
- Reduce the Sauce: Once the lentils are tender, remove the lid. Continue cooking uncovered until most of the excess liquid has cooked off and the sauce becomes thick and hearty.
- Finish and Adjust: Stir in the balsamic vinegar. Taste the bolognese and adjust the salt, pepper, balsamic vinegar, and chili flakes as desired. If serving with pasta, keep the sauce slightly salty to account for the pasta.
- Serve: Toss the Lentil Bolognese with your favorite pasta, or spoon it over creamy polenta.If desired, finish with pecorino cheese or a vegan cheesy sprinkle.
Notes
- Use small, quick-cooking lentils for the best results and a shorter cooking time. Larger brown lentils may take considerably longer to become tender.
- Black caviar lentils work especially well because they hold their shape during simmering and contribute a hearty texture.
- If using hemp hearts as an alternative to walnuts, use shelled hemp hearts rather than whole hemp seeds, which can create a gritty texture.
- The quality and flavor of the vegetable broth can significantly affect the finished sauce. If the sauce tastes bland, a small amount of soy sauce, miso mixed with water, or vegetable bouillon paste can help deepen the flavor.
- The sauce should be allowed to cook uncovered after the lentils become tender so excess liquid can evaporate and the bolognese develops its thick, hearty consistency.
- Taste the sauce before serving and adjust the salt, pepper, balsamic vinegar, and chili flakes as needed.
- This recipe can be prepared ahead of time and stored in the refrigerator for up to 4 days.
