Spiced Chickpea and Tomato Toast

A flavorful combination of chickpeas simmered in a smoky, warmly spiced tomato sauce with onion, garlic, and fresh basil, served over crisp toasted crusty bread. This versatile and satisfying dish comes together in under 30 minutes and is suitable for breakfast, lunch, or dinner.

Ingredients
  

For the Spiced Chickpea and Tomato Mixture
  • 1 15.5-ounce can chickpeas, drained and rinsed
  • 1 tablespoon oil
  • 1/2 medium yellow onion diced
  • 4 cloves garlic minced
  • 1/4 teaspoon crushed red pepper flakes
  • Pinch of salt plus more to taste
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 14-ounce can whole peeled tomatoes
  • 1/2 tablespoon sugar or to taste
  • 1/2 teaspoon sea salt or to taste
  • Black pepper to taste
  • 1/3 cup finely chopped fresh basil plus more for garnish
For Serving
  • 4 –6 slices crusty bread toasted
  • Optional: vegan Parmesan for garnish

Method
 

  1. Sauté the Onion: Heat the oil in a medium pan over medium heat.
    Add the diced onion and sauté for 2–3 minutes, until almost translucent.
  2. Cook the Garlic and Pepper Flakes: Add the minced garlic, crushed red pepper flakes, and a pinch of salt. Cook for 2 minutes, until fragrant.
  3. Toast the Spices: Add the smoked paprika, chili powder, and cumin.
    Stir constantly and cook for 1 minute to combine the spices with the onion mixture.
  4. Add the Tomatoes: Add the whole peeled tomatoes, sugar, and another small pinch of salt. Stir everything together.
  5. Break Down and Simmer the Tomatoes: Use a spatula to break the whole tomatoes into small pieces as thoroughly as possible.
    Reduce to low-medium heat and simmer for about 15 minutes, until the mixture has thickened.
  6. Warm the Chickpeas: Add the drained and rinsed chickpeas to the thickened tomato mixture. Simmer for 1–2 minutes, until the chickpeas are warmed through.
  7. Adjust the Seasoning: Season the mixture with sea salt and black pepper to taste, adjusting the seasoning as desired.
  8. Finish with Basil: Remove the pan from the heat and stir in the finely chopped fresh basil.
  9. Serve the Toast: Spoon the spiced chickpea and tomato mixture over the toasted crusty bread.
    Garnish with additional fresh basil and optional vegan Parmesan before serving.

Notes

  • Use canned chickpeas for convenience, making sure they are thoroughly drained and rinsed before adding them to the tomato mixture.
  • If preferred, you can prepare chickpeas from scratch instead of using canned chickpeas.
  • Break the whole peeled tomatoes into smaller pieces with your spatula while they simmer to create the rustic, thick sauce described in the recipe.
  • Adjust the sugar, salt, and black pepper to taste after the chickpeas have been warmed through.
  • Fresh parsley can be used in place of fresh basil if needed.
  • Choose a sturdy crusty bread that can hold the thick chickpea and tomato mixture.
  • For a different serving style, spoon the finished filling into a tortilla and enjoy it as a wrap.
  • Vegan Parmesan is optional but can be added as a finishing garnish.
