A savory, tangy beef kimchi fried rice featuring marinated seared beef, crisp-tender vegetables, cooked rice, scallions, sesame oil, and a runny sunny-side-up egg.

Ingredients
  

For the Beef Marinade
  • 1 cup thinly sliced beef
  • 1½ teaspoons cornstarch
  • ½ teaspoon sesame oil
  • 1 teaspoon soy sauce
  • ¼ teaspoon sugar
  • 1 teaspoon Shaoxing wine
For the Fried Rice
  • 4 eggs
  • 3 tablespoons oil divided
  • 1 medium onion finely chopped
  • 1 red bell pepper chopped
  • 1½ cups kimchi coarsely chopped
  • 4 cups cooked white rice or brown rice
  • Salt to taste
  • ½ teaspoon sesame oil
  • ½ cup scallions chopped
  • Korean chili flakes to taste, optional

Method
 

  1. Marinate the Beef: In a bowl, combine the thinly sliced beef with cornstarch, sesame oil, soy sauce, sugar, and Shaoxing wine until evenly coated, then set it aside to marinate for at least 15 minutes.
  2. Cook the Eggs: Just before preparing the fried rice, cook the 4 eggs sunny-side up in a pan, keeping the yolks runny, then keep the eggs warm while you cook the rice.
  3. Heat the Wok: Place a wok over high heat and add 2 tablespoons of the oil, allowing it to heat until the wok begins to smoke.
  4. Sear the Beef: Add the marinated beef to the smoking-hot wok and sear it, then transfer the cooked beef to a plate and set aside.
  5. Cook the Onion: Add the remaining 1 tablespoon oil to the wok, then stir-fry the finely chopped onion until it becomes translucent.
  6. Add the Pepper: Add the chopped red bell pepper and cook for another 1 minute, stirring as it cooks.
  7. Add the Kimchi: Stir the coarsely chopped kimchi into the onion and pepper mixture, combining everything thoroughly.
  8. Fry the Rice: Add the cooked white or brown rice to the wok and stir constantly, mixing it thoroughly with the kimchi and vegetables.
  9. Return the Beef: Add the seared beef back into the wok and toss it through the rice mixture.
  10. Season the Rice: Add salt to taste, ½ teaspoon sesame oil, the chopped scallions, and a pinch of Korean chili flakes if desired for additional heat.
  11. Finish the Fried Rice: Thoroughly mix all the ingredients together so the beef, vegetables, kimchi, seasonings, and rice are evenly distributed.
  12. Serve: Divide the fried rice among servings and top with the warm sunny-side-up eggs, keeping the yolks runny for a luscious finish.

Notes

  • Marinate the thinly sliced beef for at least 15 minutes so the cornstarch and seasonings coat the meat evenly.
  • Keep the wok very hot when searing the beef; the source specifically calls for high heat until the wok begins to smoke.
  • Cook the eggs sunny-side up immediately before making the fried rice so they can remain warm and the yolks stay runny.
  • Either cooked white rice or brown rice can be used.
  • Korean chili flakes are optional and can be adjusted to taste.
