Spinach Parmesan Gnocchi

This comforting Italian-inspired gnocchi skillet combines pillowy potato gnocchi, hearty cannellini beans, fire-roasted tomatoes, fresh spinach, and Parmesan for a flavorful meatless meal that comes together in under 30 minutes.

Ingredients
  

  • 2 tablespoons olive oil
  • ½ cup diced yellow onion
  • 1 heaping teaspoon minced garlic
  • 14- ounce can fire-roasted diced tomatoes
  • 15- ounce can cannellini beans rinsed and drained
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt or to taste
  • 1 tablespoon salt for the gnocchi cooking water optional
  • ½ teaspoon freshly ground black pepper or to taste
  • ¼ teaspoon crushed red pepper flakes or to taste
  • 16 ounces potato gnocchi
  • 5 cups fresh baby spinach about ¾ of a 5-ounce package
  • ¼ cup grated Parmesan or a vegetarian, plant-based hard cheese, divided
  • Additional Parmesan for serving
  • Fresh basil leaves for garnish

Equipment

  • Large pot
  • Large skillet or sauté pan
  • Colander
  • Wooden spoon or spatula
  • Lid for the skillet
  • Measuring cups and spoons

Method
 

  1. Boil the Water: Fill a large pot with water and bring it to a boil while preparing the tomato and bean mixture.
  2. Sauté the Aromatics: Heat the olive oil in a large skillet or sauté pan over LOW heat.
    Add the diced onion and minced garlic, then cook for 3 to 4 minutes, stirring occasionally, until the onion is soft but not browned and the garlic is very fragrant.
  3. Build the Tomato Mixture: Add the fire-roasted diced tomatoes, rinsed and drained cannellini beans, Italian seasoning, salt, black pepper, and crushed red pepper flakes to the skillet.
    Increase the heat as needed to bring the mixture to a low boil.
  4. Simmer the Beans: Cover the skillet with a lid and reduce the heat to LOW.
    Let the tomato and bean mixture simmer for 5 minutes.
  5. Cook the Gnocchi: Once the water reaches a rapid boil, add about 1 tablespoon of salt, if desired.
    Add the potato gnocchi and cook for 3 to 4 minutes, or until the gnocchi floats to the surface.
  6. Drain the Gnocchi: Drain the cooked gnocchi well in a colander.
  7. Combine the Ingredients: Remove the skillet from the heat.
    Add the drained gnocchi, fresh baby spinach, and 2 tablespoons of the grated Parmesan to the tomato and cannellini bean mixture.
  8. Wilt the Spinach: Stir everything together gently until the spinach is slightly wilted and the ingredients are evenly combined.
  9. Finish and Serve: Sprinkle the remaining Parmesan over the top and garnish with fresh basil leaves.
    Serve immediately with additional Parmesan on the side.

Notes

  • Refrigerate leftovers in an airtight container for up to 2 days.
  • Gently reheat refrigerated gnocchi in the microwave or in a skillet on the stove.
  • The optional salt in the gnocchi cooking water can be adjusted to your preference.
  • Add the spinach after removing the skillet from the heat so it becomes slightly wilted while retaining its fresh character.
  • Serve with extra Parmesan for a richer, more savory finish.
