Summer Watermelon Cucumber Salad

Sweet watermelon, crisp cucumber, fresh mint and basil, and creamy feta come together in this vibrant salad, finished with a tangy honey-lime dressing. It is quick to assemble, refreshing, colorful, and best served right away.

Ingredients
  

Honey-Lime Dressing
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 to 2 tablespoons quality extra virgin olive oil
  • Pinch of salt
Watermelon Salad
  • 1/2 watermelon peeled and cut into cubes
  • 1 English or hot house cucumber cubed, about 2 cupfuls
  • 15 fresh mint leaves chopped
  • 15 fresh basil leaves chopped
  • 1/2 cup crumbled feta cheese or more to your liking

Method
 

  1. Whisk the Dressing: In a small bowl, whisk together the honey, lime juice, extra virgin olive oil, and a pinch of salt until combined. Set the dressing aside.
  2. Combine the Salad Ingredients: Add the cubed watermelon, cubed cucumber, chopped mint, and chopped basil to a large bowl or a serving platter with sides. Gently combine the ingredients so the watermelon remains intact.
  3. Dress the Salad: Pour the prepared honey-lime dressing over the watermelon mixture, then gently toss until the dressing is distributed throughout the salad.
  4. Add the Feta: Sprinkle the crumbled feta cheese over the dressed salad, adding more if desired.
  5. Serve Immediately: Serve the watermelon salad right away for the freshest texture and flavor.

Notes

  • Prepare the salad close to serving time because watermelon and cucumber release a lot of liquid.
  • The honey-lime dressing can be prepared up to 3 days ahead and stored in the refrigerator.
  • Use an English or hot house cucumber as specified in the original recipe, and cube it before combining with the watermelon.
  • Adjust the amount of feta to your preference while keeping the cheese crumbled for easy distribution.
  • For variations, add shallots or red onions, avocado cubes, or hot peppers.
  • Aleppo-style pepper flakes can be added for a little heat and sweet undertones.
  • If you have leftovers, store them in a tightly covered glass container for a night or two and check them before serving.
