Teriyaki Chicken Lettuce Wraps

Tender ground chicken and colorful vegetables are cooked in a savory homemade teriyaki sauce, then tucked into crisp lettuce leaves and finished with fresh, crunchy toppings.

Ingredients
  

Teriyaki Sauce
  • 3 tablespoons soy sauce regular rather than reduced sodium
  • 3 tablespoons hoisin sauce
  • ½ teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • ½ teaspoon minced garlic
  • ½ teaspoon grated ginger
  • ⅛ teaspoon red pepper flakes optional
Chicken Filling
  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 cup red bell pepper diced
  • 1 cup sweet yellow onion diced
Lettuce Wraps & Toppings
  • 2 romaine hearts rinsed and dried; bibb or iceberg lettuce may be substituted
  • ½ cup carrot julienne cut into small matchsticks
  • ½ cup cilantro minced
  • 2 tablespoons peanuts roughly chopped
  • ½ cup green onion thinly sliced
  • Sweet Thai chili sauce optional, for serving

Method
 

  1. Prepare the Teriyaki Sauce: In a large bowl, whisk together the soy sauce, hoisin sauce, sesame oil, rice vinegar, minced garlic, grated ginger, and optional red pepper flakes until well combined, then set the sauce aside.
  2. Cook the Ground Chicken: Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat, then add the ground chicken and immediately begin breaking it apart with a wooden spoon or spatula; cook for 4 to 5 minutes.
  3. Add the Vegetables: Stir the diced red bell pepper and sweet yellow onion into the cooked chicken mixture, then continue cooking for another 4 to 5 minutes.
  4. Finish the Filling: Pour the prepared teriyaki sauce into the skillet and reduce the heat to medium-low; cook the chicken and vegetables in the sauce for 3 minutes so the flavors combine.
  5. Transfer the Filling: Remove the chicken, pepper, and onion mixture from the skillet and place it in a bowl.
  6. Prepare the Lettuce: Rinse the romaine leaves gently under cold water, avoiding hot water because it can cause the lettuce to wilt; pat the leaves dry with paper towels to remove excess moisture.
  7. Assemble the Wraps: Spoon the warm chicken filling into the lettuce leaves, dividing it among the leaves as desired.
  8. Add the Toppings: Finish each lettuce wrap with the julienne carrots, minced cilantro, chopped peanuts, and sliced green onion.
  9. Serve: Serve the lettuce wraps immediately, with Sweet Thai Chili Sauce on the side if desired.

Notes

  • Rinse the lettuce gently under cold water to help keep the leaves crisp, then pat them dry thoroughly before assembling the wraps.
  • Bibb or iceberg lettuce can be used instead of romaine if preferred.
  • For the ginger, peel the skin with a spoon, then grate it on the smallest side of a cheese grater or use a lemon zester.
  • Take care when grating ginger to keep your fingers away from the grating surface.
  • Stainless steel skillets are recommended in the source because they heat evenly and can sear the chicken and vegetables effectively.
  • Prepare the toppings before serving so the wraps can be assembled quickly while the filling is warm.
  • Red pepper flakes are optional, so they can be omitted if you prefer a milder flavor.
