Traditional Jamaican Festival Dumplings

These Jamaican Festival dumplings are sweet, golden, and crisp on the outside with a soft, fluffy interior. Fine yellow cornmeal adds a distinctive texture and gentle flavor, while flour, sugar, baking powder, salt, and milk create a simple, tender dough. Shaped by hand and fried until beautifully golden, they are best enjoyed warm.

Ingredients
  

  • cups all-purpose flour
  • ½ cup fine yellow cornmeal
  • 4 tablespoons granulated white sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk with 2–3 tablespoons more or less as needed to form the dough
  • Vegetable oil as needed for frying

Method
 

  1. Combine the Dry Ingredients: Add the all-purpose flour, fine yellow cornmeal, granulated sugar, baking powder, and salt to a medium-sized mixing bowl, then stir until evenly combined.
  2. Form the Dough: Gradually add the milk while using your hands to bring the mixture together into a dough, adding more milk if needed; the finished dough should be soft but not wet or sticky.
  3. Knead Gently: Knead the dough just enough to bring it together and make it smooth, taking care not to over-knead.
  4. Shape the Festivals: Pinch or cut off pieces about the size of a large golf ball, then roll and shape each piece between your palms with a back-and-forth motion into a long, thick oval.
  5. Prepare the Oil: Pour vegetable oil into a medium heavy-bottom pot and heat it over medium-low heat until ready for frying.
  6. Fry the Festivals: Carefully place the shaped festivals into the heated oil and fry for about 8–10 minutes, maintaining a low to medium heat so the oil continues to sizzle gently around the dumplings.
  7. Turn During Frying: Flip each festival halfway through cooking and continue frying patiently until the exterior becomes evenly golden brown and the dumplings are cooked through.
  8. Check for Doneness: Tap a festival in the pan with a fork or spoon; when properly cooked, it should produce a hollow sound.
  9. Drain and Cool: Remove the golden festivals from the oil and place them on a wire rack to drain excess oil and cool slightly.
  10. Serve Warm: Enjoy the Jamaican festivals while they are still warm.

Notes

  • Add the milk gradually rather than all at once, since the dough may require slightly more or less than ¾ cup.
  • Aim for a dough that feels soft but is not sticky or wet.
  • Avoid over-kneading, as the original recipe calls for only enough kneading to form the dough.
  • Shape each portion into a long, thick oval for the traditional festival shape.
  • Fry over low to medium heat and avoid rushing the cooking process so the festivals cook through while becoming golden brown.
  • Flip the festivals halfway through the 8–10 minute frying period for even browning.
  • If the dough becomes too wet from adding excess milk, incorporate more flour to bring it back to the proper consistency.
  • A hollow sound when tapped with a fork or spoon is a useful indication that the festivals are cooked through.
