A quick and flavorful Thai-inspired coconut noodle soup featuring seared prawns, creamy coconut milk, aromatic lemongrass, ginger, garlic, warming curry spices, and a touch of chilli. Ingredients
  

For the Thai Coconut Soup
  • 1 tbsp vegetable oil
  • 10 prawns/shrimp peeled and deveined
  • 2 garlic cloves finely grated
  • 2 tsp ginger finely grated
  • 1 lemongrass stalk peeled and finely grated
  • 1 tbsp brown sugar
  • tbsp fish sauce or soy sauce
  • 2 tsp curry powder
  • 1 tsp coriander powder
  • 2 tsp chilli garlic paste or another chilli paste adjusted to taste
  • 400 g / 14 oz coconut milk
  • 2 cups / 500 ml chicken broth or vegetable broth
  • 2 tsp lime zest from 1 lime
  • 200 g / 7 oz fresh egg noodles prepared according to the packet instructions
  • 1 large handful bean sprouts
For Serving
  • Lime wedges
  • Fresh coriander/cilantro leaves
  • Sliced red onion or sliced green onion
  • Fried Asian shallots
  • Sliced red chilli
  • Additional chilli paste optional

Method
 

  1. Sear the Prawns: Heat the vegetable oil in a large saucepan over high heat. Add the prawns and sear them on both sides until lightly golden. They do not need to be fully cooked through at this stage. Transfer the prawns to a plate.
  2. Adjust the Heat: Reduce the heat to medium. If the saucepan looks dry, add a small amount of extra oil.
  3. Cook the Aromatics: Add the finely grated garlic, ginger, and lemongrass. Sauté for about 20 seconds, until the garlic turns golden.
  4. Add the Sugar and Fish Sauce: Stir in the brown sugar and fish sauce. Cook for about 30 seconds, stirring, until the mixture develops a caramel-like appearance.
  5. Toast the Spices and Chilli Paste: Add the chilli paste, coriander powder, and curry powder. Stir continuously and cook for 30 seconds to combine the flavors.
  6. Create the Coconut Broth: Pour in the chicken broth and coconut milk. Stir well and bring the mixture to a simmer.
  7. Add the Lime and Prawns: Simmer the broth for 2 minutes. Stir in the lime zest, then return the seared prawns and any juices from the plate to the saucepan.
  8. Finish the Soup: Cook for another 2 minutes, just until the prawns are reheated and finish cooking.
  9. Prepare the Noodle Bowls: Divide the prepared fresh egg noodles among serving bowls.
  10. Serve the Soup: Ladle the hot coconut broth and prawns over the noodles.

Notes

  • Prawns: If using frozen prawns, defrost them before cooking.
  • Lemongrass: Remove the tough outer layers and use only the bottom 12 cm / 5 inches of the stalk—the white and very pale green portion that can be finely grated.
  • Lemongrass Paste: You can use 1 tbsp lemongrass paste instead. Stir it into the soup after adding the coconut milk.
  • Curry Powder: Any preferred curry powder can be used. Choose mild curry powder for flavor without much heat, or hot curry powder for a spicier result.
  • Chilli Paste: Chilli garlic paste works well, but other chilli pastes or Asian-style hot sauces can also be used. Adjust the quantity according to your preferred spice level.
  • Coconut Milk: Low-fat coconut milk can be used, but the soup will have a thinner consistency and a less pronounced coconut flavor.
  • Noodles: Use 200 g / 7 oz fresh thick noodles, around 180 g / 6 oz thinner fresh noodles, or approximately 120–150 g / 4–5 oz dried noodles such as rice noodles, vermicelli, egg noodles, or ramen.
  • Asian Fried Shallots: These crispy shallots add excellent texture and flavor as a garnish and can be found in Asian grocery stores or many supermarket Asian food sections.
  • Serving: Add fresh lime juice just before eating to brighten the rich coconut broth.
