  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cinnamon
  • 2 cups 480 ml low-sodium vegetable broth or water
  • 1 tablespoon tahini
  • Substitute: cashew butter or a few tablespoons of plain non-dairy yogurt
  • 3 cups 480 g cooked chickpeas, or 2 (15-ounce / 425 g) cans, drained and rinsed
  • 2 teaspoons red wine vinegar

  • Cooked couscous bulgur wheat, quinoa, or brown rice
  • Pita or another flatbread
  • Toast
  • Fresh chopped parsley leaves optional

Method

  4. Thicken the Tomatoes: Cook the tomato mixture for 10 minutes, stirring frequently, until it becomes very bubbly and begins to thicken.
  5. Simmer the Stew: Pour in the vegetable broth or water and reduce the heat to maintain a gentle simmer. Cook uncovered for another 10 minutes.
  6. Add the Tahini and Blend: Stir the tahini into the stew. Use an immersion blender to partially blend the mixture, leaving some visible pieces of tomato while creating a thick, chunky, soup-like consistency.
