This Lentil Bolognese is a rich, hearty, and deeply savory plant-based sauce designed to bring plenty of comfort and satisfying texture to the table.

Tender lentils create the substantial, “meaty” character of the dish, while finely diced onion, carrots, celery, and garlic build a flavorful aromatic base.

Tomato paste and juicy tomatoes add concentrated richness, and a splash of red wine, when used, contributes extra depth.

The sauce develops its robust flavor as the ingredients gently simmer together in vegetable stock.

Toasted ground walnuts add body and a pleasantly hearty texture, helping create a thick, satisfying bolognese that clings beautifully to pasta.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion diced (about 2 to 2½ cups)
  • cups carrots finely diced
  • cups celery diced
  • 4 –6 cloves garlic roughly chopped
  • teaspoons salt
  • ½ teaspoon black pepper
  • ¼ teaspoon chili flakes optional
  • 1 tablespoon fresh oregano or thyme or 2 teaspoons dried Italian herbs
  • cup tomato paste
  • ¼ cup red wine optional, or substitute broth
  • cups black caviar lentils or another small, quick-cooking lentil
  • cups diced tomatoes with their juices or one 14-ounce can diced or crushed tomatoes
  • cups vegetable stock or vegetable broth or water plus 2–3 bouillon cubes
  • ¾ cup toasted ground walnuts, or substitute hemp hearts or ground pecans
  • 2 teaspoons balsamic vinegar

Equipment

  • Large pot or Dutch oven
  • Wooden spoon or sturdy spatula for stirring
  • sharp knife
  • Cutting board
  • Measuring cups and measuring spoons
  • Small grinder or food processor for grinding the toasted walnuts, if needed
  • Lid that fits the pot tightly

Method

  1. Sauté the Onion: Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the diced onion and sauté for 2–3 minutes, stirring, until fragrant.
  2. Cook the Aromatics: Reduce the heat to medium. Add the carrots, celery, garlic, salt, pepper, optional chili flakes, and fresh herbs or dried Italian herbs.
Sauté for 7–8 minutes, stirring regularly.
  3. Brown the Tomato Paste: Add the tomato paste to the pot and cook it briefly, allowing it to brown slightly and deepen in flavor.
  4. Deglaze the Pot: Pour in the red wine, if using, or use broth instead. Scrape up any browned bits from the bottom of the pot.
Cook until most of the wine has evaporated.
  5. Cook the Tomatoes: Add the diced tomatoes along with their juices.
Cook for a few minutes, allowing the tomatoes to reduce slightly.
  6. Add the Lentils and Stock: Stir in the lentils, vegetable stock or broth, and the ground toasted walnuts, hemp hearts, or ground pecans.
Bring the mixture to a boil.
  7. Simmer the Bolognese: Cover the pot tightly, reduce the heat to low, and simmer gently for 20–25 minutes, or until the lentils are tender.
Keep in mind that larger lentils may require a longer cooking time.
  8. Reduce the Sauce: Once the lentils are tender, remove the lid. Continue cooking uncovered until most of the excess liquid has cooked off and the sauce becomes thick and hearty.
  9. Finish and Adjust: Stir in the balsamic vinegar. Taste the bolognese and adjust the salt, pepper, balsamic vinegar, and chili flakes as desired.
If serving with pasta, keep the sauce slightly salty to account for the pasta.
  10. Serve: Toss the Lentil Bolognese with your favorite pasta, or spoon it over creamy polenta.
If desired, finish with pecorino cheese or a vegan cheesy sprinkle.

Notes

  • Use small, quick-cooking lentils for the best results and a shorter cooking time. Larger brown lentils may take considerably longer to become tender.
  • Black caviar lentils work especially well because they hold their shape during simmering and contribute a hearty texture.
  • If using hemp hearts as an alternative to walnuts, use shelled hemp hearts rather than whole hemp seeds, which can create a gritty texture.
  • The quality and flavor of the vegetable broth can significantly affect the finished sauce. If the sauce tastes bland, a small amount of soy sauce, miso mixed with water, or vegetable bouillon paste can help deepen the flavor.
  • The sauce should be allowed to cook uncovered after the lentils become tender so excess liquid can evaporate and the bolognese develops its thick, hearty consistency.
  • Taste the sauce before serving and adjust the salt, pepper, balsamic vinegar, and chili flakes as needed.
  • This recipe can be prepared ahead of time and stored in the refrigerator for up to 4 days.

Chef’s Secret

The most useful technique for creating a deeply flavorful Lentil Bolognese is to give the tomato paste time to brown slightly before adding the liquid.

After the vegetables have softened, stir the tomato paste directly into the pot and let it cook briefly rather than immediately mixing it with the tomatoes and broth.

This simple step helps develop a deeper, richer tomato flavor and adds more complexity to the finished sauce.

Once the paste has darkened slightly, deglaze the pot with the optional red wine or broth, making sure to scrape up any browned bits from the bottom.

Those concentrated bits contain valuable flavor that becomes part of the sauce.

Combined with the final splash of balsamic vinegar, this technique helps create a richer, more balanced bolognese.

Serving Suggestions

Serve this hearty Lentil Bolognese generously tossed with your favorite pasta, allowing the thick sauce to coat each portion.

It is also excellent spooned over creamy polenta for a comforting alternative to pasta.

For extra finishing flavor, add a sprinkle of pecorino cheese or a vegan cheesy topping.

A simple side salad or your preferred vegetable side can complement the rich, savory character of the sauce and help create a satisfying complete meal.

Conclusion

This rich and satisfying Lentil Bolognese proves that a plant-based sauce can still deliver plenty of hearty texture and deep, savory flavor.

With tender lentils, aromatic vegetables, tomatoes, herbs, and toasted walnuts, it creates a comforting meal that works beautifully with pasta or creamy polenta.

Easy to prepare ahead and enjoyable for the whole family, this flavorful bolognese is a versatile recipe worth adding to your regular meal rotation.
