  • 3 tablespoons dried pomegranate seeds anardana
  • 2 teaspoons chili flakes
  • 1 teaspoon black pepper ideally coarsely ground
  • ½ teaspoon turmeric
  • ¼ teaspoon carom seeds ajwain
  • 3 teaspoons salt or to taste
  • 1 tablespoon dried fenugreek kasoori methi or 2 tablespoons fresh fenugreek, chopped
  • 1 handful coriander chopped
  • 2 eggs
  • 2.2 lb 1 kg minced meat, finely minced and containing at least 20% fat
  • Oil or beef tallow for frying

Method
 

  1. Toast the Whole Spices: Gently preheat a dry pan over medium-high heat.
