Ingredients
  

For the Chickpea Curry Salad
  • 1 tablespoon coconut oil or vegetable or rapeseed oil
  • 1 onion diced
  • 1 teaspoon curry powder or to taste
  • 400 g 14 oz canned chickpeas, drained and rinsed
  • 50 g ⅓ cup raw cashew nuts, soaked overnight in cold water or in boiling water for 10 minutes
  • 2 tablespoons lemon juice
  • 1 teaspoon mango chutney or agave or maple syrup
  • A handful of fresh coriander cilantro, roughly chopped, or 1 teaspoon dried coriander
  • 2 tablespoons desiccated coconut
  • Salt and pepper to taste

  • Pitta bread flatbread, or sandwich bread, ensuring it is gluten-free if necessary
  • Lettuce leaves
  • Red pepper cut into matchsticks
